INGREDIENTS

 

1 cauliflower cut into florets
1 teaspoon of turmeric
1 teaspoon of curry powder
3 tablespoons of olive oil
2 x 400g (14 oz) can lentils, drained and rinsed
1 teaspoon of ground cumin and coriander
1 small onion finely chopped
2 cloves of garlic finely chopped
Bunch of coriander, chopped
1 lime

 



 

 

DIRECTIONS
1. Pre heat the oven to 200 degrees Celsius. In a large bowl add the cauliflower, turmeric, curry powder, and 2 tablespoons of olive oil. Mix well. Spread onto a baking sheet and roast for 15-20 minutes or until golden and soft.
2. While the cauliflower is cooking, heat a pan on medium heat with 1 tablespoon of olive oil. Add the onion and cook for 2 minutes or until softened. Add the garlic, ground cumin and ground coriander and cook for 1 minute. Add the lentils and cook for a few minutes until warmed through.
3. Once the cauliflower is cooked, warm the tortillas in the oven for a few minutes.
4. Fill your tortillas with the roasted cauliflower, lentils and chopped coriander. Serve with a squeeze of lime juice.
