2 tablespoons of vegetable stock
½ an onion finely chopped
1 teaspoon of ground cumin
1 teaspoon of smoked paprika
200g extra firm tofu
Half an avocado, mashed
Black pepper to taste
2 slices of sourdough.
1. Heat a pan on medium heat with the vegetable stock. Add the onion, cumin, and paprika.
2. Fry for 5 minutes until onion has softened.
3. Put the tofu into a bowl and mash until it looks like scrambled eggs. Add to the pan. Cook gently until warmed through.
4. Serve on toasted sourdough with mashed avocado.
