INGREDIENTS
3/4 cup grated courgettes
3/4 cup grated sweet potato
1/2 cup breadcrumbs (about 1 slice of bread)
2 eggs, whisked
2 spring onions chopped
2 tablespoons of grated parmesan cheese
2 tablespoons of olive oil
1/4 plain flour
4 wholegrain burger buns
50g mixed salad leaves
2 tomatoes
4 tablespoons of relish
DIRECTIONS
1.) Squeeze the excess moisture out of the courgettes. Add to a large bowl with the sweet potato, breadcrumbs, eggs, spring onions and parmesan. Season to taste and shape into four even sized patties. Chill for 15 minutes.
2.) Heat a large pan with 2 tablespoons of olive oil. Dust patties in flour. Fry for 3-4 minutes each side. Drain on a paper towel.
3.) Fill burger buns with relish, salad leaves, tomato and a pattie.
