INGREDIENTS
 
1 red onion
200g (7 oz) mushrooms
100g (3.5 oz) rye bread
1 teaspoon of ground coriander
1 x 400g (14 oz) can black beans
2 tablespoons of olive oil
4 large tomatoes
mixed salad leaves
1 ripe mango (optional)
1/2 an avocado (optional)
4 burger buns
500g (17.6 oz) kumara (sweet potato)
1 tablespoon of olive oil
4 tablespoons of natural yoghurt
 
 
 
 
DIRECTIONS
  1. Preheat oven to 200 degrees Celsius.
  2. Peel and cut the kumara into wedges and coat in 1 tablespoon of olive oil and season with salt. Roast on an oven tray for around 30 minutes or until soft.
  3. While the kumara is roasting, peel the onion and put into a whiz along with the bread, coriander and mushrooms. Whiz until finely chopped.
  4. Drain the black beans and add to whiz and blend until finely chopped. Divide into 4 even patties . Rub with olive oil and roast in oven for 25 minutes until dark and crispy.
  5. Warm the bread rolls in the oven for a few minutes and assemble your burger. Yoghurt on the bottom, then add mango slices, salad leaves, tomato slices and top with bean pattie. Serve with kumara wedges.
