Black Bean Burgers

INGREDIENTS
1 red onion
200g (7 oz) mushrooms
100g (3.5 oz) rye bread
1 teaspoon of ground coriander
1 x 400g (14 oz) can black beans
2 tablespoons of olive oil

4 large tomatoes
mixed salad leaves
1 ripe mango (optional)
1/2 an avocado (optional)
4 burger buns
500g (17.6 oz) kumara (sweet potato)
1 tablespoon of olive oil
4 tablespoons of natural yoghurt
DIRECTIONS
- Preheat oven to 200 degrees Celsius.
- Peel and cut the kumara into wedges and coat in 1 tablespoon of olive oil and season with salt. Roast on an oven tray for around 30 minutes or until soft.
- While the kumara is roasting, peel the onion and put into a whiz along with the bread, coriander and mushrooms. Whiz until finely chopped.
- Drain the black beans and add to whiz and blend until finely chopped. Divide into 4 even patties . Rub with olive oil and roast in oven for 25 minutes until dark and crispy.
- Warm the bread rolls in the oven for a few minutes and assemble your burger. Yoghurt on the bottom, then add mango slices, salad leaves, tomato slices and top with bean pattie. Serve with kumara wedges.
