INGREDIENTS

 

100g (3.5 oz) almonds
4 weetbix crumbled
1 large ripe banana, chopped
200g (7 oz) fresh medjool dates, chopped (or swap for regular dried dates)
1 teaspoon of vanilla extract
5 tablespoons of desiccated coconut

DIRECTIONS


1. Add the almonds to a food processor and blend until finely ground.
2. Add the weetbix, banana, dates, vanilla and 2 tablespoons of coconut.
3. Process until combined.
4. Roll heaped tablespoons into balls and roll lightly in coconut.
5. Store in an airtight container in the fridge for up to 3 days.
