Semolina Pudding with Fruit

INGREDIENTS
6 tablespoons of fine semolina
6 cups of milk of your choice (cow’s, soy, or almond)
1 teaspoon of vanilla essence
2 tablespoons of sugar
Mixed berries of your choice
DIRECTIONS
1. In a large pot mix the semolina with a few tablespoons of milk to make a paste. Add the vanilla and then the rest of the milk.
2. Put on a medium heat and stir constantly so no lumps are formed. Continue cooking for around 10 minutes, until it thickens. Turn off the heat, add the sugar and mix well.
3. Spoon into bowls and top with fruit of your choice.
