Scrambled Egg Burritos

INGREDIENTS
4 eggs
1 tablespoon of olive oil
½ cup of chopped capsicum
4 large tortillas
DIRECTIONS
1. Add the olive oil to a large pan on a medium-high heat. Add the capsicum and sauté until tender. Remove and transfer to a bowl.
2. Crack the eggs into a small bowl and whisk. Add to the pan (medium heat) and scramble until cooked.
3. Warm the tortillas in the microwave for 20 seconds. Fill with egg and capsicum. Season with black pepper.
4. Serve. You could add a little fat free sour cream if you wish – but this will increase the saturated fat.
