INGREDIENTS
1 heaped cup of pitted medjool dates
¼ cup maple syrup or honey
¼ cup creamy salted natural peanut butter (or almond butter)
1 cup roasted unsalted almonds – chopped
½ cups rolled oats
Options to add – chocolate chips, dried fruit (sultanas, cranberries, apricots), nuts

DIRECTIONS
- Blitz the dates in a blender (about a minute) until they look like a dough.
- Put oats, almonds and dates into a large bowl.
- Heat the honey and peanutbutter in a small pot or pan – use a low heat.
- Pour the honey mixture over the oats and nuts. Mix well to ensure the dates are well spread out through the mixture.
- Line a 8x8 inch dish with baking paper.
- Spread the mixture into your dish. Make sure the mixture is pressed down well – you can use a glass to roll across the mixture if you like.
- Cover with cling film (plastic wrap) and put in the fridge or freezer for at least 20 minutes.
- Remove from dish and cut into 10 bars. Store in the fridge in an airtight container for up to 2 days.
