INGREDIENTS
1 heaped cup of pitted medjool dates
¼ cup maple syrup or honey
¼ cup creamy salted natural peanut butter (or almond butter)
1 cup roasted unsalted almonds – chopped
½ cups rolled oats
Options to add – chocolate chips, dried fruit (sultanas, cranberries, apricots), nuts
DIRECTIONS
  1. Blitz the dates in a blender (about a minute) until they look like a dough.
  2. Put oats, almonds and dates into a large bowl.
  3. Heat the honey and peanutbutter in a small pot or pan – use a low heat.
  4. Pour the honey mixture over the oats and nuts. Mix well to ensure the dates are well spread out through the mixture.
  5. Line a 8x8 inch dish with baking paper.
  6. Spread the mixture into your dish. Make sure the mixture is pressed down well – you can use a glass to roll across the mixture if you like.
  7. Cover with cling film (plastic wrap) and put in the fridge or freezer for at least 20 minutes.
  8. Remove from dish and cut into 10 bars. Store in the fridge in an airtight container for up to 2 days.
