INGREDIENTS

4 egg whites at room temperature
Pinch of salt
1 cup caster sugar
½ teaspoon vanilla essence

DIRECTIONS
  1. Heat oven to 120 degrees Celsius.
  2. Line two trays with baking paper.
  3. Whisk egg whites and salt until soft peaks form.
  4. Gradually add the sugar a tablespoon at a time until fully dissolved.
  5. Beat for a further 3 minutes. Add vanilla essence and beat again.
  6. Spoon onto baking tray.
  7. Turn oven down to 90 degrees and bake for 1 and a half hours.
  8. Turn oven off and leave meringues in the oven to cool completely.
  9. Store in an airtight container for up to a week.

Serve with a little whipped cream and decorate with fruit.
