4 tablespoons of olive oil
1 onion chopped
3 cloves of garlic finely chopped
250g mediterranean veg (eg peppers, courgettes, aubergine)
400g (14 oz) can chopped tomatoes
350g pasta (eg penne)
bunch of fresh basil leaves
1.) Heat a large casserole dish on medium heat with the olive oil. Cook the onion for around 10 minutes until starting to caramelize. Add the garlic for the last 2 minutes.
2.) Add your vegetables (tomatoes, peppers, courgettes, etc). Season with salt and pepper and simmer uncovered for 10 minutes or until you have a rich sauce.
3.) While the sauce is cooking, cook your pasta according to packet instructions, Once cooked drain and leave some of the water behind. Tip the pasta into the sauce and add some pasta water if the sauce is too thick.
4.) Mix well and serve with scattered basil leaves.
