Granola (Vegan)

INGREDIENTS
400g (14 oz) jumbo oats
2 teaspoons of cinnamon
150g (5.2 oz) dried apple, roughly chopped
250g (8.8 oz) mixed nuts, roughly chopped
100ml maple syrup
150g (5.2 oz) coconut oil, melted

DIRECTIONS
1.) Preheat the oven to 180 degrees Celsius.
2.) Line two baking trays with baking paper.
3.) Combine all ingredients (except maple syrup). Spread the granola onto the baking trays and drizzle over the maple syrup.
4.) Bake for 20 minutes, stirring well halfway through cooking.
5.) Leave to cool. Store in an air tight container. Keeps for 1 month.
