Filo Apple and Pear Pie

INGREDIENTS
6 apples
4 pears
Zest and juice of 1 lemon
3 tablespoons of maple syrup
1 teaspoon of mixed spice
1 tablespoon of cornflour
4 sheets of filo pastry
4 teaspoons of rapeseed oil
25g (0.8 oz) flaked almonds.
DIRECTIONS
1. Peel and chop the pears and apples into chunks.
2. Put into a large saucepan with the lemon juice, maple syrup, mixed spice and 200ml of water.
3. Bring to a simmer with a lid on. Remove the lid and cook for around 5 minutes, stirring all the time until the apple starts to soften. Scoop out 3/4s of the fruit and put into a pie dish.
4. Cover and cook the rest of the fruit for 5 minutes until soft and then mash with a fork or potato masher.
5. Add the cornflour to the fruit and stir to make a smooth paste. Keep stirring until the sauce thickens. Pour over the fruit in the pie dish. Mix well.
6. Pre heat the oven to 180 degrees Celsius.
7. Lay out the pastry and brush each with 1 teaspoon of oil.
8. Scatter the almonds over the pastry sheets and press them down so they stick.
9. Crumple each sheet of pastry and put it on top of the fruit.
10. Bake for around 20 minutes or until golden brown.
11. Serve immediately.
