Chocolate Brownie Cookies

INGREDIENTS
150g (5.2 oz) pecans
150g hazel nuts
400g (14.1 oz) icing sugar
100g (3.5 oz) cocoa
Pinch of salt
1 tablespoon of vanilla paste
4 eggs
DIRECTIONS
1. Preheat the oven to 160 degrees Celsius.
2. Roughly chop the nuts.
3. Sift the icing sugar, cocoa powder and salt into a large bowl.
4. Add the nuts and vanilla paste.
5. In a separate bowl, separate the egg whites from the yolks (save the yolks for something else). Beat the whites for around 5 minutes or until soft peaks form. Mix into the dry ingredients.
6. Spoon large teaspoons of mixture onto baking trays.
7. Bake for 10-15 minutes (should be crisp on the outside and gooey on the inside).
8. Cool slightly before transferring to a wire rack to cool properly.
