INGREDIENTS
2 cups salted peanuts (or other nuts, e.g. ground almonds)
1½ cups fresh wholemeal breadcrumbs
2 cups finely grated carrot
1 teaspoon oregano
3 Tablespoons oil
3 Tablespoons fresh orange juice
½ cup vegetable stock
Gravy (optional, see below)

DIRECTIONS
1) Grind the peanuts (or alternative nuts) in food processor.
2) Mix with breadcrumbs, carrot and herbs. If mixture is too dry, add a little water.
3) Mix oil and orange juice together and add vegetable stock liquid. Add to nut mixture.
4) Mix well and place in a lined loaf tin, making sure to press well into the corners.
5) Bake 180°C for 30 minutes.
6) Serve with gravy.
