INGREDIENTS
1 cup flour
¼ cup cocoa
¼ tsp salt
225 g chocolate chips
½ cup canola oil
3 eggs
½ cup sugar
2 tsp vanilla
2 cups grated beetroot

DIRECTIONS
- Heat your oven to 160 degrees Celsius
- Line a baking pan with baking paper
- Sift the flour, cocoa and salt into a large bowl
- Beat the eggs, sugar and vanilla in a bowl
- Add wet ingredients into flour mixture
- Fold in grated beetroot and chocolate chips
- Mix until just combined. Pour into prepared tin.
- Bake for about 45 minutes or until a skewer comes out clean.
- Cool before cutting.
You could add walnuts as an option.
