INGREDIENTS
1 cup flour
¼ cup cocoa
¼ tsp salt
225 g chocolate chips
½ cup canola oil
3 eggs
½ cup sugar
2 tsp vanilla
2 cups grated beetroot
DIRECTIONS
  1. Heat your oven to 160 degrees Celsius
  2. Line a baking pan with baking paper
  3. Sift the flour, cocoa and salt into a large bowl
  4. Beat the eggs, sugar and vanilla in a bowl
  5. Add wet ingredients into flour mixture
  6. Fold in grated beetroot and chocolate chips
  7. Mix until just combined. Pour into prepared tin.
  8. Bake for about 45 minutes or until a skewer comes out clean.
  9. Cool before cutting.

You could add walnuts as an option.
