Brown Rice Salad

INGREDIENTS
1 cup of cooked brown rice (or use something like Uncle Ben’s microwavable pots of rice)
1 capsicum, chopped
½ cup of kidney beans
½ a small onion finely chopped
1 stick of celery chopped
Zest and juice of 1 lime
1 teaspoon of maple syrup or honey
Bunch of coriander

DIRECTIONS
1. Cook the rice according to packet instructions.
2. Rinse under cold water to cool down.
3. Add the beans, onion, celery and capsicum.
4. Mix the lime zest and juice, maple syrup or honey together. Add to the salad.
5. Stir through chopped coriander leaves and serve.
