BANANA BREAD

INGREDIENTS
140 grams wholemeal flour
100 grams of self-raising flour
1 teaspoon of baking soda
1 teaspoon of baking powder
Pinch of salt
3 large ripe (as black as possible) bananas, mashed
2 tablespoons of honey (optional)
3 eggs, beaten with a fork
150ml low fat Greek yoghurt
2 tablespoons of chopped walnuts (optional)

DIRECTIONS
- Heat oven to 160 degrees Celsius (140 degrees if using a fan oven/ gas mark 3)
- Line a loaf tin with baking paper
- In a large bowl mix the flours, baking soda, baking powder and salt.
- Mash the bananas in a medium sized bowl
- Add the honey, beaten eggs and yoghurt to the bananas and mix well
- Add the banana mixture to the flour mixture
- Mix well and add the walnuts (if using)
- Pour into baking tin and cook for approximately 1 hour – 1 hour 15 minutes (until a skewer comes out clean)
- Cool on a wire rack
- Serve warm
