INGREDIENTS
 
140 grams wholemeal flour
100 grams of self-raising flour
1 teaspoon of baking soda
1 teaspoon of baking powder
Pinch of salt
3 large ripe (as black as possible) bananas, mashed
2 tablespoons of honey (optional)
3 eggs, beaten with a fork
150ml low fat Greek yoghurt
2 tablespoons of chopped walnuts (optional)
DIRECTIONS
  1. Heat oven to 160 degrees Celsius (140 degrees if using a fan oven/ gas mark 3)
  2. Line a loaf tin with baking paper
  3. In a large bowl mix the flours, baking soda, baking powder and salt.
  4. Mash the bananas in a medium sized bowl
  5. Add the honey, beaten eggs and yoghurt to the bananas and mix well
  6. Add the banana mixture to the flour mixture
  7. Mix well and add the walnuts (if using)
  8. Pour into baking tin and cook for approximately 1 hour – 1 hour 15 minutes (until a skewer comes out clean)
  9. Cool on a wire rack
  10. Serve warm
