Akoori (Indian Scrambled Eggs)

Ingredients
1 tablespoon of olive oil
1 small red onion finely chopped
1 chilli, de seeded and finely chopped
2 cloves of garlic, finely chopped
¼ teaspoon of cumin
¼ teaspoon of garam masala
Pinch of turmeric
2 large tomatoes (seeds removed), chopped
7 eggs, beaten
Bunch of coriander, chopped
4 Chapatis (Indian flatbread).
1. Heat a large pan on a low heat and add the olive oil.
2. Fry the onion, chilli and garlic for 5 minutes or until soft. Add the spices and cook another 1-2 minutes.
3. Add the tomatoes and cook 1 minute. Pour in the eggs and lower the heat. Stir slowly to scramble the mixture. Remove from the heat while the eggs are still a little runny. Stir off the heat for 1 minute until eggs are just set.
4. Stir through the coriander and serve.
